RING OF MELON SALAD 
1 honeydew melon
Lettuce leaves
1 pt. (2 c.) strawberries, sliced
1 c. fresh blueberries

DRESSING:

3/4 c. yogurt
3 tbsp. orange juice
1/2 to 1 tsp. grated orange peel

Cut honeydew crosswise into 3/4-inch slices; remove seeds and rind. Cut decorative edge on 4 or 5 center rings, if desired; place on lettuce-lined salad plates. Cut remaining melon into cubes. Combine melon cubes, strawberries and blueberries; spoon into center of melon rings. Combine all dressing ingredients; spoon over fruit. 4 to 5 servings.
