COLD BROCCOLI VINAIGRETTE 
1 lg. head broccoli
1 sm. Spanish onion, chopped
2 hard boiled eggs, chop whites only

DRESSING:

1/3 c. tarragon vinegar
2/3 c. olive oil
1 tsp. brown mustard
1 tsp. horseradish

Steam broccoli for 5-10 minutes. Drain and rinse with cool water. Sprinkle onion and egg white on broccoli. Prepare dressing and pour over broccoli. Refrigerate overnight or at least 5 hours. Serves 8.
