MILLIONAIRE NUT PIE 
3 egg whites
1 c. sugar
1 tsp. vanilla
3/4 c. confectioners' sugar
8 oz. crushed pineapple, drained
21 Ritz crackers
2/3 c. crushed walnuts
1/2 pt. heavy cream

Beat egg whites until stiff. Add sugar and vanilla. Fold in crackers and nuts. Spread in a 10 inch pie plate, sprayed with Pam. Bake at 350 degrees for 30 minutes until light brown.

Mix cream cheese and confectioners' sugar until smooth. Spread over cooled pie shell. Whip heavy cream until stiff. Fold in drained pineapple and spread over cream cheese. Sprinkle with nuts.

Optional: If you like more pineapple, spread another 8 ounce can of drained crushed pineapple between cream cheese and whipped cream.
