KEY LIME PIE 
3 eggs, separated
1/2 tsp. rind, grated
1/4 c. Key lime juice
1/2 tsp. salt
1 c. sugar
Pie shell already baked

Separate yellows and beat until thickened; thoroughly. Pour into top of double boiler and cook 10 minutes stirring constantly. Remove top of pan from heat and let stand until cool. Beat egg whites and beat in remaining sugar until dissolved and mixed. Fold beaten egg whites into lime mixture when it is cool. Pour into pie shell and bake in preheated 400 degree oven for 10 minutes.
