KEY WEST LIME PIE | |
2 oz. bottled lime juice or 6 sm. limes (sufficient limes to make 1/4 c. of juice) 15 oz. can sweetened condensed milk 2 eggs Spray can of whipping cream or 1 c. whipping cream and 2 tbsp. powdered sugar Few drops of green food coloring 1 baked pie crust in a 7 inch pan Put the sweetened condensed milk into a mixing bowl, add 1/4 cup lime juice. Stir this in slowly so juice will penetrate the sweetened milk and begin to congeal. Beat the egg yolks and stir into the juice and milk mixture. Then beat the egg whites stiff and fold them into the pie to give it a fluffy texture. Add a few drops of green coloring matter if you want the pie colored the shade of fresh limes. |
