COQ AU VIN 
Chicken breasts for 4 people
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic salt
1 1/2 c. pearl onions
Sliced tomatoes
2 c. sliced mushrooms
1 c. white wine
1 tsp. dry parsley
1/2 tsp. tarragon
1 tbsp. bouquet garni

Brown chicken in butter, meat side down. Sprinkle all spices on top of meat. Add tomato slices on top. Add onions and mushrooms. Cover and simmer for 1/2 hour. Baste occasionally. Uncover and simmer for 15 minutes.
