MY MOTHER'S FRUIT CAKE 
2 c. unsweetened applesauce
2 tsp. salt
2 c. sugar
2 eggs
3 c. flour
2 tsp. baking powder
1 tsp. salt
4 tbsp. melted butter
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 tsp. allspice
1 c. nutmeats (black and English walnuts, pecans or choice)
1 c. mixed fruit peels (citron, orange etc.)
1 orange, juice and rind without white inner liner, chopped
1 lemon, juice and rind without white inner liner, chopped
1 c. strawberry preserves (optional)
1 c. dates
1 1/2 c. raisins

On wax paper, chop dates, raisins, nuts, etc. Cover with 1/2 cup flour and with hands mix until each piece is coated. In large bowl mix batter from applesauce, etc. Add fruit and nut mixture stirring enough to coat. Bake in tube pan 2 1/2 hours in 275 degree oven without preserves. Makes a 9 pound cake.
