AMERICANA KEY LIME PIE | |
1 tbsp. gelatin 1/4 tsp. salt 1/2 c. lime juice 1 tbsp. grated lime peel 1/2 c. sugar 1/2 c. granulated sugar 4 eggs, separated 1/4 c. water Green food coloring 1 c. whipped cream 1 baked pie shell Combine gelatin, 1/2 cup sugar and salt. Beat egg yolks until thick. Add lime juice and water. Stir in gelatin. Cook over medium heat just until mixture comes to a boil. Remove from heat. Add lime peel and coloring. Chill, stirring occasionally, until mixture mounds when dropped from a spoon. Beat egg whites to soft peaks. Gradually add 1/2 cup sugar. Beat until stiff peaks. Fold into first mixture. Fold in whipped cream. Chill until firm. Spread additional whipped cream before serving. Decorate with lime peel. Sprinkle grated pistachio nuts in center, if desired. |
