APPLESAUCE CAKE | |
1 cup (2 sticks) soft butter 2 cups sugar 2 eggs 4 cups applesauce 4 cups all-purpose flour 2 teaspoons cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon cloves 1/2 teaspoon allspice 1/2 teaspoon salt 6 teaspoons baking soda 1 cup nuts, chopped 1 cup raisins, chopped 1 cup dates, chopped 1 pint mixed candied fruit Beat together butter and sugar. Add beaten eggs. Dissolve baking soda in applesauce. Sift dry ingredients and add alternately with applesauce to butter/sugar mixture. Add nuts, raisins, dates and mixed fruit. Bake in a large tube pan lined with paper or a well-greased Bundt pan at 250°F to 300°F for 1 1/2 hours or until cake tests done. |
