GENOESE STYLE STUFFING FOR
RAVIOLI OR PEPPERS
 
2 pkgs. chopped frozen spinach, cooked and drained
1 lb. (pkg.) roll sausage meat (Rath brand)
1 1/2 c. plain bread crumbs
1 1/2 c. grated Parmesan
1 lb. Ricotta cheese
4-6 eggs
Salt and pepper to taste

All ingredients variable to taste. Mix by hand. If making stuffed peppers, halve peppers from stem to bottom. Stuff and put in pan with cooking oil on bottom. Cover pan with aluminum foil and cook at 400 degrees for 30 minutes. Lower temperature to 350 degrees, uncover and cook for 30 minutes more.
