SWEET POTATO PONE 
2 lb. sweet potatoes, peeled
2 extra lg. eggs
1/4 c. dk. brown sugar
3/4 c. whole milk
1 tsp. orange rind
1/2 tsp. cinnamon
Pinch nutmeg (fresh if available)
2 tbsp. melted butter

Grate potatoes, set aside. In extra large bowl, mix eggs and sugar. Mix in milk, rind and cinnamon and nutmeg. Mix in potatoes well. Spoon onto 1 1/2 qt. baking dish or pie plate and pack down. Brush with butter. Bake 1 hour and 15 minutes at 350 degrees or until eges are blackened and surface is browned. Serve warm or at room temperature. With more sugar, this can be served as a dessert with a dollop of whipped cream.
