LEMON CHEESE CAKE 
1 c. butter
8 oz. cream cheese
2 c. sugar
3 tsp. lemon flavoring
2 tbsp. grated lemon zest (save 1 tbsp. for glaze)
6 eggs
2 c. flour (save 1/4 c.)
1/2 c. grated mild cheddar cheese

GLAZE:

1 lb. box powdered sugar
1 sm. can evaporated milk
1 tbsp. lemon zest

Preheat oven to 275 degrees.

Cream cheese and butter. Add sugar and beat until fluffy. Add eggs, 1 at a time. Then add lemon flavoring, 1 tablespoon lemon zest. Add 1 3/4 cup flour at little at a time, beating well. Mix 1/4 cup flour with cheddar cheese and stir into batter. Pour into bundt pan, greased and floured. Bake 1 1/2 hours, do not open oven door. Cool completely and drizzle on glaze.
