LEMON ZUCCHINI MUFFINS 
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. grated lemon peel
1/2 tsp. nutmeg
1/2 c. chopped nuts
1/2 c. golden raisins
2 eggs
1/2 c. milk
1/3 c. oil
1 c. packed shredded zucchini, not drained

In a large bowl, mix flour, sugar, powder, salt, lemon peel and nutmeg. Stir in nuts and raisins. In a small bowl, beat eggs, add milk and oil. Add to flour mixture, sprinkle zucchini on top. Stir just until blended. Fill greased muffin pans 2/3 full. Bake in a 400 degree oven 15-25 minutes or until toothpick inserted in center comes out clean.
