PINEAPPLE TORTE 
CRUST:

1/2 c. butter
1 c. flour
1 tbsp. sugar

FILLING:

1 c. crushed pineapple, sweetened
2 tbsp. sugar
2 tbsp. cornstarch dissolved in water

CUSTARD:

4 1/2 tbsp. sugar
1 1/2 c. milk
3 egg yolks
1 1/2 tbsp. cornstarch
2 tbsp. butter
1 tsp. vanilla
Salt

Mix first three ingredients. Pat in a 9 x 13 inch pan. Bake until golden brown at 350 degrees about 10 minutes. Cool.

For filling, boil pineapple, sugar and cornstarch until thick and cool. Spread on crust.

For custard, boil sugar, milk, cornstarch, salt and egg yolks until thick. Add vanilla and butter. Cool and spread on pineapple mixture.

3 egg whites
Pinch of cream of tartar
1/2 c. sugar

Beat until stiff. Bake in 350 degree oven until golden brown.
