OATMEAL BATTER BREAD | |
3/4 c. boiling water 1/2 c. old fashioned rolled oats 3 tbsp. shortening 1/4 c. honey 1 tsp. salt 1/4 tsp. apple pie spice 1 env. yeast 1/2 tsp. sugar 1/4 c. warm water 1 egg, slightly beaten 2 3/4 c. flour, sifted Grease 9 5 x 3 inch loaf pan. Stir together boiling water, oats, shortening, honey, salt, and apple pie spice in a large bowl until well mixed. Cool until lukewarm. Sprinkle yeast and sugar over very warm water in a 1 cup glass measuring cup. Stir to dissolve yeast. Let stand until bubbly, about 10 minutes. Add yeast mixture, egg, and 1 1/4 cups flour to oatmeal mixture. Beat at low speed, 2 minutes, scraping down sides of bowl occasionally. Gradually beat in remaining 1 1/2 cups flour, beating until batter is smooth. Spread batter in prepared pan. Cover with buttered wax paper and a towel. Let rise in a warm place away from drafts until doubled in bulk, about 45 minutes. Bake in 375 degree preheated oven, about 60 minutes or until loaf sounds hollow when tapped with fingers. Remove from pan; cool on wire rack. |
