ORANGE CHICKEN | |
1/2 c. butter 2 broiler fryer chickens, cut into serving pieces 4 tsp. salt 1/2 tsp. pepper 2 tsp. paprika 3 lg. onions, sliced 1 (6 oz.) can frozen orange juice 1/2 c. honey 1/4 c. lemon juice 2 tsp. ginger 1 tsp. nutmeg 1 c. sliced ripe black olives 1 c. seedless orange sections (I use mandarin) Heat butter in heavy skillet and brown chicken. Sprinkle with salt, pepper and paprika. Transfer chicken to a heavy casserole dish and keep warm. Separate onions into rings and saute in the same skillet until tender. Spread over chicken. Combine orange juice concentrate, honey, lemon juice, ginger and nutmeg. Pour into skillet and bring to a boil, stirring constantly. Pour over chicken. Sprinkle olives over chicken. Cover and bake at 350 degrees for 1 hour. Add orange sections and heat. Serves 8. |
