DEVILED CRAB 
1 lb. blue crab meat
2 tbsp. chopped onions
2 tbsp. cooking oil
2 tbsp. flour
3/4 c. milk
1 tbsp. lemon juice
1 1/2 tsp. salt
3 drops Tabasco
1 egg, beaten
1 tbsp. chopped parsley
1/4 c. dry bread crumbs
Dash of cayenne pepper

Remove all shell or cartilage from crab meat. Cook onion in fat until tender, blend in flour. Add milk gradually and cook until thick, stirring constantly. Add lemon juice and seasonings.

Stir a little of the Tabasco sauce into the beaten egg, add to the remaining sauce, stirring constantly. Add parsley and crabmeat; blend well. Place in 6 well-greased individual shells or 5 ounce custard cups. Sprinkle top with bread crumbs. Bake at 350 degrees for about 20 to 25 minutes or until golden brown.
