GREEN CHILI CORN MUFFINS 
2 pkgs. Jiffy Corn Muffin
2 eggs
2/3 c. milk
1 can whole corn (drained)
1 sm. can chopped green chilies
1 sm. onion (chopped)
8 oz. Cheddar cheese (grated)

Mix corn muffin mix, eggs and milk. Add the remaining ingredients and stir. Spoon into greased muffin tins (or use cupcake cups). Bake at 400 degrees for 15-20 minutes.
