MANGO CHUTNEY 
18 very lg. green mangos
2 handsfull salt
9 lg. green peppers
1 can pimentos
1 lb. currants
1 sm. can packed slivered almonds
2 cloves garlic
1 c. candied ginger
8 lbs. sugar
2 qts. vinegar
1/2 tsp. powdered ginger
1/2 tsp. red pepper

Coarsely chop peppers, pimentos, almonds, currants, and garlic. In a large pan, mix the sugar, vinegar, powdered ginger, and red peppers and bring to a boil. Combine the two mixtures, and boil 15 minutes. Add mangos and boil until tender, about 2 hours. Makes about 8 quarts. Very good!
