RICE PILAF CASSEROLE 
1 1/2 c. rice, uncooked
1/4 c. butter
3 c. chicken or beef broth, heated
3/4 c. parsley, finely chopped
3/4 c. carrots, chopped
3/4 c. celery, chopped
1/2 c. green onions, chopped (optional)
3/4 c. nuts, chopped

Set oven to 350 degrees. Melt butter in casserole in oven. Add rice; stir. Bake, covered 20 minutes. Add all other ingredients. Bake, covered 25 minutes. Add more broth if necessary.
