STUFFED FLOUNDER FILLETS 
2 - 2 1/2 lb. flounder fillets
1 pkg. frozen chopped spinach
1 pkg. Ritz crackers (crushed)
Garlic (to taste)
Oregano (to taste)
Salt, pepper (to taste)
3/4 c. cooking wine
1 stick butter
Bacon
1 deep sided baking dish

Crush crackers, add salt, pepper, garlic, oregano, chopped spinach (cooked and drained) and melted butter.

Lay out fillet, add stuffing and roll. Place seam side down. Continue until all fillets are stuffed. Place bacon strips over fillets and pour over cooking wine. Bake uncovered in a 375 degree oven for 20-25 minutes. Serves 8.
