BUTTERNUT SQUASH & MANGO 
This makes a great substitution for mashed potatoes!

1-2 fresh mango
1 small butternut squash
1 small onion
2 tbsp. butter

Preheat 12-inch fry pan on medium-high heat. Chop onion. Dice butternut squash. Dice mangoes.

Melt butter in pan. Sauté onion until just transparent. Add diced butternut squash and stir occasionally until browned. Add mangoes. When squash is soft (test with a fork) take off heat and mash. Salt & pepper to taste.
