MONTEREY JACK CASSEROLE 
2 c. cooked rice
1 (7 oz.) can chopped green chiles
1 block Monterey Jack cheese
3 med. zucchini
1 lg. tomato, sliced
2 c. sour cream
1 tsp. oregano
1 tsp. garlic salt
2 tbsp. green pepper, chopped
2 tbsp. green onion, chopped
1 tbsp. parsley

Place rice in buttered casserole dish. Cover with strips of cheese then zucchini slices and tomatoes.

Mix sour cream with spices, chiles, green pepper and onions. Pour over all.
