DOUBLE TREAT PEANUT BUTTER
COOKIES
 
2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 c. shortening
1 c. sugar
1 c. firmly packed light brown sugar
2 eggs
1 tsp. vanilla extract
1 c. peanut butter
1 c. Spanish peanuts
1 pkg. (6 oz.) semi-sweet chocolate chips

Preheat oven to 350 degrees. In medium bowl combine flour, baking soda and salt. In mixer bowl cream shortening and sugars until light. Add eggs and vanilla; beat until light and fluffy, scraping bowl occasionally. Blend in peanut butter. Gradually add dry ingredients; beat until blended. Stir in peanuts and chocolate chips.

Drop by teaspoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until lightly browned. Remove to wire racks to cool. Makes about 9 dozen, about 70 calories per cookie.
