TURKEY TOSTADOS 
1 tbsp. salad oil
1/2 c. chopped onion
1 tbsp. chili powder
2 c. V-8 Vegetable Juice
1 can red kidney beans, drained
2 c. diced, cooked turkey or chicken
6 corn tortillas (6 inch)
1 1/2 c. shredded lettuce
1 medium tomato, diced
1/2 c. Cheddar cheese, shredded

Cook onion with chili powder in oil in a saucepan over medium heat. Stir in V-8 juice and beans; heat to boiling. Reduce heat to low. Cover; simmer 10 minutes, stirring occasionally. Stir in turkey; heat through. Place tortillas on baking sheet. Bake at 400 degrees for 8 minutes or until crisp. Spoon 2/3 cup turkey filling on each tortilla. Top with lettuce, tomato, and cheese.
