ZUCCHINI DESSERT SQUARES 
1/2 c. butter
1/2 c. oil
1 3/4 c. sugar
2 eggs
1/2 c. buttermilk
1 tsp. vanilla
2 c. grated raw zucchini
Chocolate bits & walnuts for topping
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. cocoa
1 tsp. cinnamon

Cream butter, oil, sugar. Add eggs, 1 at a time. Blend in buttermilk and vanilla. Add dry ingredients slowly to creamed mixture. Stir in zucchini by hand.

Spread in a greased 11 x 16 inch jelly roll pan. Sprinkle chocolate bits and walnuts over the top and bake at 350 degrees for 15 to 20 minutes. Turn off the oven if more time is needed, leave in oven 5 minutes. Cut in 2 to 4 inch squares.
