FARMER'S CASSEROLE 
1/2 c. uncooked rice
1 c. boiling water
1 tsp. salt
1 lb. lean pork, cut in 1-inch cubes
1 1/2 c. chopped onion
1 1/2 c. chopped celery
1/2 c. chopped green pepper
1 sm. jar pimento, drained and chopped
1 can condensed cream of mushroom soup
2 tbsp. soy sauce

Put rice into a 2-quart casserole. Add boiling water and salt. Brown meat in 2 tablespoons oil in heavy skillet. Add onion, celery, and green pepper. Cook until onion is golden. Mix in pimento, soup, and soy sauce. Turn into casserole with the rice. Blend gently. Cover and bake at 350 degrees about 1 1/4 hours or until meat and rice are tender. Remove cover the last 15 minutes if lightly browned surface is desired. Serves 6.
