SUPER - BAKED POTATOES
4 to 6 med. sized potatoes
2 onions, sliced into thin rings
1 stick butter
Garlic powder
Coarse ground black pepper

Prepare potatoes by washing and cutting slits into the potatoes every 1/2 inch (approximately). Slits should be about 3/4 of the way through the potatoes. In each slit, place a slice of onion and a thin pat of butter. Place the potato on a piece of foil. Sprinkle with garlic powder and pepper. Wrap tightly in foil. You may either bake in the oven at 400 degrees (note, place on a cookie sheet as butter tends to seep out) or put on the gas grill on low heat until soft (note, turn with tongs rather than fork to prevent excessive grease splatters). Leftovers make tasty home fries for breakfast the next day.
