SWEET POTATO PUDDING - 1828 | |
1 lb. cooked and peeled sweet potatoes 1 1/4 c. sugar 1/2 c. butter 6 egg yolks, well beaten 1 tbsp. grated lemon rind 1/4 tsp. mace 1 c. orange juice 6 egg whites 1 tbsp. slivered citron Rub potatoes through a sieve, then add 1 cup sugar and butter. Combine with egg yolks, lemon rind, mace and orange juice. Beat the egg whites until stiff, then fold carefully into sweet potato mixture. Place in a greased 3 quart baking dish. Sprinkle with remaining slivered citron. Bake at 350 degrees for 1 hour. |
