COCOA GINGER SNAPS 
3 c. shortening
4 c. sugar
4 eggs
1 c. molasses
8 c. flour
1 c. cocoa
2 tbsp. baking soda
4 tbsp. ground ginger
2 tsp. salt
1 c. sugar

Gradually add 4 cups sugar to shortening while beating until light and fluffy. Add eggs and beat well. Stir in molasses. Add flour, cocoa, soda, ginger and salt. Stir until completely mixed. Shape dough into one inch balls; roll in 1 cup sugar. Place 2 inches apart on a greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Remove from cookie sheets to wire racks to cool. Make about 16 dozen.
