EASY SCAMPI 
1/4 c. finely chopped onion
4 cloves garlic, crushed
4 sprigs fresh parsley, chopped
3/4 c. butter
2 lb. fresh medium shrimp, peeled and deveined
1/4 c. dry white wine
2 tbsp. lemon juice
salt to taste
fresh ground pepper to taste

Sauté onion and parsley in butter until onion is tender. Reduce heat to low; add shrimp. Cook, stirring frequently, about 5 minutes. Remove shrimp with slotted spoon. Spoon into serving dish; keep warm. Add remaining ingredients to butter mixture; simmer 2 minutes. Pour butter mixture over shrimp. Serve immediately.

Makes 4 servings.

Serve with French bread. This is good served over angel hair pasta.
