SWEET AND SOUR PORK CHOPS 
4 to 6 pork chops
Flour, salt, and pepper
1/4 c. sugar
1/2 c. cider vinegar
1/4 c. brown sugar
2 tbsp. soy sauce
1/8 tsp. salt
1/4 c. chopped onion
1 green pepper, coarsely chopped
1 c. shredded carrots

Flour pork chops and salt and pepper to taste; brown in a heavy skillet. Drain any excess fat. Combine and cook vinegar, sugars, soy sauce and salt to a thin syrup. Add onions and green pepper. Pour sauce over chops. Cover and cook slowly 1 hour or until tender. Add carrots, stir just until hot. Serve chops with the sauce that clings. Pass extra sauce.
