CHICKEN AND RICE CASSEROLE 
1 or 2 c. chopped, cooked chicken
1 c. chopped celery
1 tbsp. chopped onion
1 can cream of chicken soup
1/2 c. toasted slivered almonds
2 c. cooked rice (takes 1/2 c. raw rice)
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. mayonnaise
3 hard boiled eggs, chopped
1 can French fried onions

Mix all ingredients together except onion rings. Place in a casserole and cover and bake at 350 degrees for 20 minutes. Remove cover, sprinkle onion rings on top and bake 5 minutes longer.
