BANANA CAKE | |
1 box yellow cake mix 2 sm. ripe bananas 1 (3 1/2 oz.) pkg. vanilla instant pudding 4 eggs 1 c. water 1/4 c. cooking oil 1/3 c. chopped nuts (optional) Slice bananas in large mixer bowl and beat until well mashed. Add remaining ingredients to blend, then beat at medium speed 2 minutes. Pour into well greased and floured Bundt or tube cake pan. Bake at 350 degrees for approximately 50 minutes, or until done. Cool cake in pan 5 to 10 minutes, then remove to serving plate. Drizzle with Brown Butter Icing: Heat 1 tablespoon butter until lightly browned, stirring frequently; cool. Gradually add 1/2 cup sifted powdered sugar, 1 tablespoon milk and 1/2 teaspoon vanilla. Mix well. |
