MEXICAN NACHOS 
1 to 2 lbs. ground beef
1 onion, finely chopped
1 sm. (8 oz.) can tomato paste
1 sm. (8 oz.) can tomato sauce
3 cans water
2 tsp. salt
2 tsp. oregano
2 tsp. cumin seed
2 tsp. Accent
2 tsp. garlic salt
2 tsp. chili powder
1/2 c. rice
1 (10 oz.) pkg. tortilla chips
1 to 2 c. shredded Cheddar cheese
3 med. tomatoes, chopped
1/2 head of lettuce, shredded

Brown ground beef and onion, then drain. Add other ingredients except for tortillas, Cheddar cheese, chopped tomatoes and lettuce.

Stir occasionally and cook until rice is tender.

Simmer for 30 minutes. Top 2 heaping spoonfuls of mixture over tortilla chips, then lettuce, tomatoes and shredded Cheddar cheese.

Serves 8.
