CHICKEN WITH TOMATOES AND ONION
SOUP MIX
 
2 to 3 lbs. chicken
3 to 4 tbsp. fat
Lemon pepper, thyme, basil, seasoned salt (any favorite spices)
1 to 2 cans tomatoes
Env. Lipton onion soup
Rice

2 or 3 pounds of chicken (I take the skin and fat off and I use thighs, legs, or whatever). Brown chicken in an electric frying pan or skillet with 3 or 4 tablespoons of fat. I use all kinds of spices on my chicken (lemon pepper, thyme, basil, seasoned salt, chervil, or whatever is your choice). Brown well on both sides until tender. Remove chicken from skillet and pour off excess fat. Leave a little in pan for extra browning. Return chicken to pan. Add 1 or 2 cans of tomatoes, crushed (I use 2 cans). Add 1 envelope of Lipton's onion soup. Stir well and often. Simmer over low heat until chicken is tender, about 20 or 30 minutes. Serve with rice, green vegetables or salad. Enjoy!
