BEAN RELISH 
1 (1 lb.) can cut green beans, drained
1 (1 lb.) can cut wax beans, drained
1 (1 lb.) can small red beans, drained and rinsed
1 (1 lb.) can black eyed peas, drained and rinsed
1 green pepper, chopped
1 onion, chopped
2/3 c. sugar
2/3 c. red wine vinegar
2/3 c. oil
1 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. crumbled tarragon
1/2 tsp. basil leaves
3 tbsp. chopped parsley

Mix thoroughly, cover and refrigerate overnight. Makes 6 to 8 servings.
