YAM BANANA PUDDING 
1 c. mashed banana (ripe is best)
2 c. peeled, cooked, and mashed sweet potatoes (or about two 17 oz. cans)
1/2 c. milk
1/2 c. sour cream
1/2 c. orange juice
1/3 c. light brown sugar
1/4 c. butter, melted
1 tbsp. grated orange rind
1/2 tsp. pumpkin pie spiced
1/4 tsp. salt
4 eggs, separated

Preheat oven to 350 degrees. Combine all ingredients, except egg whites, in a large bowl. In a separated bowl, beat egg whites until stiff. Fold them into banana mixture. Pour mixture into a greased 2 quart baking dish and bake for 1 1/4 hours or until golden. Serve hot or cold topped with whipped cream or topping, if desired. Yield: 6 to 8 servings.
