STUFFED ZUCCHINI 
Large zucchini
1 onion
1 green pepper
1/2 lb. hamburger
8 oz. tomato sauce or spaghetti sauce
Salt, pepper & garlic to taste
Mozzarella cheese, shredded
Parmesan cheese

Cut large squash in half lengthwise. Scoop out pulp leaving 1/2 inch around edge.

Saute onion and pepper until tender. Add hamburger, saute until the pink is gone. Add zucchini pulp (chopped up) salt, pepper and garlic to taste. Add 4 ounce tomato sauce.

Fill cavity of squash - pour other 4 ounce sauce around squash. Add mozzarella and Parmesan cheese and sprinkle over filling. Cover with foil and bake at 375 degrees for 1 hour.
