ZUCCHINI DESSERT BREAD 
3 c. shredded zucchini
2 2/3 c. sugar
2 tsp. vanilla
2/3 c. vegetable oil
2 eggs
2/3 c. milk
3 1/2 c. flour
3 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2/3 c. shredded coconut
2/3 c. coarsely chopped walnuts
1/2 c. miniature chocolate chips

Preheat oven to 350 degrees and grease two 9 x 5 x 2 inch loaf pans. Mix zucchini, sugar, vanilla, oil, eggs, and milk in a large bowl. Beat until slightly frothy. Add flour, baking powder, salt, cinnamon, and nutmeg, then mix well. Fold in coconut, walnuts and chocolate chips.

Evenly divide mixture between the two greased pans. Bake about one hour, or until a toothpick can be inserted and comes out clean. Cool completely before spreading cream cheese frosting.
