WONDERFUL HEALTHY STUFFING 
8 oz. cornbread stuffing mix
1/4 c. thinly sliced celery
1 egg (or egg white) for binding
8 oz. chicken broth
1/4 chopped scallions or onions
1 c. diced fruit

Summer: Peaches, plums and apricots.

Winter: Pears, apples and dried apricots.

Mix all together and stuff 1 roasting chicken or double and stuff a small turkey. Put leftover stuffing in a casserole and bake with the chicken during last 1/2 hour.
