CHICKEN ITALIAN STYLE 
4 chicken breasts, boned and flattened
1 egg, beaten
3 tbsp. flour
1/2 c. olive or vegetable oil
1 c. thinly sliced button mushrooms
1 c. shredded mozzarella cheese
16 oz. tomato sauce with small tomato chunks
1/2 tsp. Italian seasoning, dried
Salt and pepper

Coat chicken with egg and flour. Fry in medium heated oil turning evenly about 10 to 15 minutes. Put in dish, sprinkle with salt and pepper. Meanwhile heat tomato sauce and seasoning to a boil, then simmer 5 minutes. Place mushrooms and cheese on chicken. Bake 20 minutes.
