BISCUIT MIX 
8 c. flour
1 1/2 c. nonfat dry milk
2 tsp. salt
4 tbsp. baking powder
1 1/2 c. shortening or lard

Mix all dry ingredients; blend shortening into dry ingredients with fork or blender. Store in tightly closed container in cool, dark place. Makes 10 cups. This can be used for pancake mix or pizza crust.

For pancake use: 1 cup mix, 1/2 cup water, 1 egg and 2 tablespoons oil. Mix and fry.

For pizza crust: 1 package yeast, 1/4 cup warm water and 2 1/2 cups mix. Sprinkle yeast over warm water, let stand for 5 minutes to soften. Add milk and stir well, knead until smooth, about 20 minutes. Makes 2 (12") crusts. Bake completed pizza at 375 degrees if raw meat is used. If cooked sausage or cheese is used, bake at 425 degrees.
