CINNAMON BREAKFAST APPLES
1 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
4 or 5 lg. cooking apples (about 1 1/2 lbs.)
2 tbsp. water
1/4 c. butter

Combine sugar, cinnamon, and nutmeg. Pare apples and chop into bite-size pieces. Put in a 4-cup measure, sprinkling with cinnamon sugar as you add apples. When you have 4 cups, put apples, water and butter into a saucepan. Cover and cook over low to medium heat, stirring once or twice, for 15-20 minutes or until apples are tender. Serve for breakfast with biscuits or grits and eggs. Makes 2 2/3 cups.

Breakfast Apples. Prepared in minutes, they make a surprising and rewarding way to "breakfast" at your home, when slathered generously on buttered hot biscuits or breads.
