QUICK 'N EASY CHICKEN TACO RICE 
1 lb. boneless chicken breasts, cut in strips
1 1/2 tbsp. oil
1 1/2 c. water
1 can (8 oz.) tomato sauce
1 pkg. taco seasoning mix
1 c. sweet corn, drained
1 med. red pepper, cut in strips
1 1/2 c. long grain rice (instant)
1/4 c. shredded Cheddar cheese

Cook and stir chicken in hot oil until lightly browned. Add water, tomato sauce and seasoning mix. Bring to a boil. Reduce heat, cover and simmer 5 minutes. Add corn and red pepper. Bring to a full boil.

Stir in rice. Cover: remove from heat. Let stand 5 minutes. Fluff with a fork. Sprinkle with cheese. Serve with tortilla chips, if desired.
