KEY LIME PIE | |
3 oz. key lime juice 1 (14 oz.) can sweetened condensed milk 4 egg yolks 1 graham cracker crust 1 (8 oz.) soft cream cheese and 1 (8 oz.) Cool Whip, thawed (or meringue) 1-2 drops green food coloring (optional) 6 thin lime slices (optional) Have your crust ready. Beat egg yolks at low speed until a lighter yellow and a little creamy. Slowly add milk, beating at slow speed, until well blended and thick. Add food coloring at this time. Pour into crust. Bake 8 minutes in a 350 degree oven. TOPPING: (a) If meringue, whip up whites and cream of tartar, sugar. Top pie and bake as above. (b) Soften cream cheese by beating with mixer. add Cool Whip and mix well. Spread on cooled pie. Refrigerate until ready to serve. Garnish with twisted lime slices. |
