HOLIDAY FRUITCAKE 
1 1/2 c. whole Brazil nuts
1 1/2 c. walnut halves
2 lbs. or less pitted dates
2 (8 oz.) bottles cherries, drained
1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1/2 tsp. salt
4 eggs, slightly beaten
2 tsp. vanilla
2 tbsp. brandy (optional)

Place nuts, dates, cherries in a large bowl. Sift flour, sugar, baking powder and salt into mixture. Beat eggs well. Pour into mixture. Stir in vanilla and brandy. Place batter in a bread pan or bundt pan. Bake 325 degrees for 1 hour.

Also makes 4 small loaves from this recipe.
