HOT CROSS BUNS | |
4 to 5 c. all purpose flour 1/2 c. sugar 1 tsp. salt 1 1/2 tsp. cinnamon 2 pkg. yeast, 1 tbsp. sugar 1/2 c. very warm water 1/2 c. butter 1 c. milk, scalded 2 eggs 1 c. currents 1 recipe egg wash (beat 1 egg white and 1 tsp. salt until foamy) Dissolve yeast in very warm water and 1 tablespoon sugar. Add butter to scalded milk and cool to lukewarm. Combine 1 1/4 cups flour with sugar, salt and cinnamon. Add to milk mixture and beat well. Add yeast mixture, beaten eggs and 1 cup of flour or enough to make a thick batter. Beat at high speed with mixer, for two minutes. Add remaining flour and knead for 10 minutes until smooth and elastic. Add currents and mix well. Place in greased bowl turn to greased top. Cover and let rise for one hour. Form into small balls and place on greased baking sheet. Let rise until double. Brush with egg wash and bake 20 minutes at 350 degrees or until golden. Make cross on each bun with confectioners' icing. |
