POLYNESIAN CHICKEN-PINEAPPLE 
1 ripe pineapple
2 cooked chicken breasts
1 green pepper
1 tbsp. cooking wine
1/2 c. vinegar
1/2 c. ketchup
1/2 c. sugar
Pinch of garlic powder
Pinch of ginger
Cornstarch

Slice pineapple lengthwise; cut out fruit in chunks with grapefruit knife, reserving shells. Cut chicken and green pepper into chunks. Combine pineapple chunks, chicken and green pepper in large saucepan. Add 1 cup water and wine. Combine vinegar, ketchup, sugar, 1/2 cup water, garlic powder and ginger; add to chicken mixture. Dissolve cornstarch in small amount of water; add to chicken mixture. Cook for 3 minutes or until thickened, stirring constantly. Serve in pineapple shells.
