BUBBLE AND SQUEAK 
1 lb. cooked hot sausage
2 c. cooked chopped cabbage (well drained)
2 c. cream sauce (recipe follows)
Bread crumbs

Cream sauce:

4 tbsp. butter
4 tbsp. flour
2 c. cold milk
Salt and pepper to taste

Melt butter in heavy saucepan. Stir in flour. Blend well over low heat. Stir in milk. Bring slowly to a boil and cook 2 minutes. Stir constantly. Season with salt and pepper according to your taste.

Mix all together and pour in casserole and bake for 30 minutes. Top with bread crumbs and bake until crumbs are browned (oven at 350 degrees).
